Red Velvet Cupcakes

To the untrained eye, an cupcake. But, to those who chose to delve into its mysterious depths: a creamy, sumptuous world is exposed.

Red Velvet Cupcake mix
1/3 cup Oil
3 Eggs
1 1/2 cups water

To get fluffy cake and cupcakes, mix the dough in one direction, pausing to scrape the sides. Mixing in different directions destroys the air bubbles that give the cake body.

Mix the cupcakes according to package directions. Bake at 350 for 19-22 minutes. Do not fill more than 1/2 full.

8 oz cool whip
1/2 cup shaved chocolate or grated
3/4 cup flaked coconut

Mix together. Wilton has a cupcake decorating set that has a REALLY long tip for inserting filling into cupcakes and whatnot. Or some cookie press sets have a tip also for that purpose. Fill cupcakes with filling. There will be plenty left for eating with spoons, hands, whatever is handy!



3 pkgs cream cheese
1 tbsp milk
1 pound or 4 cups powdered sugar

Mix well, until really creamy. Frost cupcakes.
